Spicy Broad Bean Fritters

 

 

Spicy Broad Bean FrittersThis is based on a Jamie Oliver recipe, with some added touches and a simplified method.

These fritters come out dark and crunchy on the outside, bright green and soft inside and the yogurt sauce offsets the spiciness (so don’t skimp too much on the cayenne).

 

Fritter Ingredients:

  • 250g freshly shelled broad beans
  • 1 small bunch of fresh coriander
  • 1 small bunch fresh mint
  • salt
  • freshly ground black pepper
  • ¼ tsp cayenne pepper to taste
  • ½ level teaspoon ground cumin
  • ½ fresh red chilli, deseeded and finely sliced
  • zest of 1 lemon and juice of ½ lemon
  • 1 tblspn plain flour

Fritter Method:

  • Use a hand whiz or similar to whiz the main ingredients:
    • broad beans
    • coriander
    • half the mint
    • salt
    • pepper
    • cumin
    • chilli
    • lemon zest
  • Sprinkle in enough flour to mix to a firm batter.
  • Heat a frying pan with generous amounts of olive oil in the bottom and drop teaspoons full of mixture into it to form little gem fritters.
  • Fry until they form a dark crust before turning, but make sure they don’t burn.

Yoghurt Sauce Ingredients:

  • 8 tablespoons natural yoghurt
  • Juice of ½ lemon
  • salt and pepper to taste

Yoghurt Sauce Method:

  • Squeeze half the lemon juice into the yoghurt.
  • Chop the rest of your mint leaves and stir them in.
  • Add salt and pepper to taste.

Serving:

  • Sprinkle the fritters with rock salt and serve
  • Serve the yoghurt sauce in a small jug for pouring or in small dishes for dipping
  • Works well served with a side salad dressed with a squeeze of lemon juice and drizzled sparingly with olive oil.
  • Serves 4 as a side to a main meat dish, or can be served as canapes.
